Pickled Red Onions

- Jar with lid for storing
- Measuring cup
Ingredients
- 1/2 red onion, sliced thin
- 1/2 cup of apple cider vinegar
- 1 teaspoon of fine salt
- 1 tablespoon of sugar
- Small handful of whole black peppercorns (season with your heart)
- 1/2 cup of boiling water
Method
- Place sliced onions in a jar
- In a measuring cup, add the apple cider vinegar, salt, sugar, and peppercorns. Stir to combine
- Pour hot boiling water, stir, and immediately pour over onions in jar
- Use a spoon to smoosh down onions to make sure they’re all covered in the pickling liquid
- Cover the jar with the lid, and let it sit on the counter for 60 minutes
- Refrigerate after the hour and enjoy!
