Pickled Red Onions

Equipment

  • Jar with lid for storing
  • Measuring cup

Ingredients

  • 1/2 red onion, sliced thin
  • 1/2 cup of apple cider vinegar
  • 1 teaspoon of fine salt
  • 1 tablespoon of sugar
  • Small handful of whole black peppercorns (season with your heart)
  • 1/2 cup of boiling water

Method

  1. Place sliced onions in a jar
  2. In a measuring cup, add the apple cider vinegar, salt, sugar, and peppercorns. Stir to combine
  3. Pour hot boiling water, stir, and immediately pour over onions in jar
  4. Use a spoon to smoosh down onions to make sure they’re all covered in the pickling liquid
  5. Cover the jar with the lid, and let it sit on the counter for 60 minutes
  6. Refrigerate after the hour and enjoy!
