Chili
Equipment
Large nonstick soup pot or dutch oven
Ingredients
- 1 lb ground beef
- 1 green pepper, diced
- 1/2 onion, diced
- 3 cloves of garlic, minced
- spices: cumin, paprika, chili powder, red pepper flakes all to taste
- salt
- 2 tbsp tomato paste + 4 tbsp water (optional)
- 1 can of tomato sauce
- 1 can of crushed tomatoes
- 1 can of black beans
- 1 can of kidney beans
Method
- In your large pot over high heat, add ground beef and cook until slightly brown. Get as many brown bits as you can!
- Once ground beef is slightly browned, add diced onion, green pepper, and garlic. Cook until onion is translucent and everything is fragrent.
- Add your spices + 1 tsp salt, mix until veggies are coated. Let cook for like 30 seconds more.
- Add all of your tomato sauces/pastes and mix until combined.
- Bring to a boil, reduce heat to low, stir, add the lid, and then let simmer for 30 minutes, stirring occasionally.
- Then add your canned beans, juices and all, and stir. Cook for 15 more minutes, covered.
- All done! Serve hot with your favorite toppings.
