Chili


Equipment

Large nonstick soup pot or dutch oven

Ingredients

  • 1 lb ground beef
  • 1 green pepper, diced
  • 1/2 onion, diced
  • 3 cloves of garlic, minced
  • spices: cumin, paprika, chili powder, red pepper flakes all to taste
  • salt
  • 2 tbsp tomato paste + 4 tbsp water (optional)
  • 1 can of tomato sauce
  • 1 can of crushed tomatoes
  • 1 can of black beans
  • 1 can of kidney beans

Method

  1. In your large pot over high heat, add ground beef and cook until slightly brown. Get as many brown bits as you can!
  2. Once ground beef is slightly browned, add diced onion, green pepper, and garlic. Cook until onion is translucent and everything is fragrent.
  3. Add your spices + 1 tsp salt, mix until veggies are coated. Let cook for like 30 seconds more.
  4. Add all of your tomato sauces/pastes and mix until combined.
  5. Bring to a boil, reduce heat to low, stir, add the lid, and then let simmer for 30 minutes, stirring occasionally.
  6. Then add your canned beans, juices and all, and stir. Cook for 15 more minutes, covered.
  7. All done! Serve hot with your favorite toppings.
