Chicken Tortilla Soup

Equipment

Large nonstick soup pot or dutch oven

Ingredients

  • boneless skinless chicken thighs
  • half an onion
  • lots of garlic
  • can of corn
  • can of fire roasted tomatoes
  • can of green chilis
  • can of beans
  • chicken or veggie broth
  • taco seasoning
  • hot sauce of your choice

Method

  1. Cover chicken with taco seasoning, salt and pepper
  2. Get a soup pan going with a lil oil, sear those chicken thighs real nice. and then take them off, they don’t need to be actually cooked yet
  3. In the pan with the leftover chicken gorgeousness, sauté the onions and garlic
  4. Dump in all canned ingredients
  5. Add hot sauce (i used tapatio this time but i actually usually like frank’s better for soups)
  6. Add chicken broth until it’s at a consistency you like
  7. Add the chicken back in
  8. Let it simmer on high for a while, idk like 30-40 min maybe? you’ll be able to tell when it’s done when you can shred the chicken with a fork

Toppings

  • cheese, and lots of it
  • sour cream
  • tortilla strips
  • avocado
  • lime
  • cornbread if you’re feeling nasty
